The first time I had Brussels Sprouts was a several years ago in Las Vegas. I’d somehow gone almost forty years without eating this adorable little vegetable! I can’t remember the name of the restaurant we ate at, I can’t even remember what else I had on the plate! But I remember those Brussels Sprouts! Roasted with butter and bacon and freaking delicious! The combination of the buttery “baby cabbages”, with their crispy caramelized crunchy leaves and the fried bacon pieces, made me wonder how I could have missed out all these years!
When I got back home I looked up a few recipes so that I could introduce this wonderful dish to my family. After several different variations, and some adjustments of my own, I worked out a recipe that my family has enjoyed many times over since then. When I started Keto, I adjusted the recipe again because my new way of eating allowed for more… everything.
Of course, I upped the bacon. Most oven roasted Brussels sprouts recipes call for 6 – 8 pieces of bacon… get out of here with that weak a** sh*t. I say add alllllllll the bacon!
This recipe is an excellent side dish; however, we decided awhile back that we liked it as a main dish all itself. Especially when topped with an egg, over easy… it adds another element and raises the dish to the next level!
I make this recipe about once a month, and both boys gobble it up! That’s when you know it’s a winner!
I do want to note, that because of the amount I make, I roast these in a large roasting pan. However, when making smaller batches, I do prefer to use a cast iron skillet. There’s just something about the flavor that is so much better when using cast iron. So if you don’t need such a large batch, I recommend cutting this recipe in half and roasting with a cast iron skillet.

Oven Roasted Brussels Sprouts WITH BACON!
-2 lbs Brussels sprouts
-1 lb bacon
-1 tbsp olive oil
-2 tsp garlic paste
-salt and pepper to taste
1. Preheat oven to 400 degrees.
2. Wash and trim Brussels sprouts. Cut larger sprouts in half.
3. Mix sprouts, olive oil, and garlic paste together.
4. Cut bacon into bite sized pieces. You determine the size of the bite!
5. Toss bacon into the sprouts and mix well.
6. Spread mix into a roaster or large oven-safe pan.
7. Add salt and pepper to taste.
8. Bake 20 mins. Stir, then bake another 10 minutes.
9. Enjoy! This is delicious as is; or, you can add your favorite shredded cheese, or an egg, over easy (yum!).
We got 4 servings out of this; however, we eat this as a main dish so portions are pretty generous. If you use this recipe as a side dish, you can probably get 6 servings (about 1 cup size). Using a calculation of 4 servings, this came to about 637 calories, 5 gram net carbs, 38 grams of protein, and 37 grams of fat per serving. I used the MyFitnessPal recipe creator to calculate nutritional information. Nutritional values may change based off the ingredient brands you use, and of course, the size/number of servings you make.
